Choppin’ Cauliflower

Workout: Ran on treadmill 3.1 miles (30 min?), walked 1 mile

Today starts my 4-day weekend. It’s really nice to be able to wake up without an alarm and get ready for a run without rushing because I need to be at work. I’m pretty sure I would make an awesome housewife. I tried to be a housegirlfriend and then a housefiancé. Housewife is my last chance. *gives puppy dog eyes to hubs*

Remember how I wanted to cook something that wasn’t brownies? Well, I did it! Sure, it was the most simple “recipe” in the world but I’m happy with myself for putting in the effort – because I never put in the effort.

Behold Roasted Cauliflower.

I got this idea from Tina’s blog and I notice Julie makes it all the time too.

Mix all those ingredients together in a bowl and put them in the oven on 450 degrees for 25 minutes. It’s so tasty and easy – which are my two favorite things.

Besides checking “Cook something new and healthy” off my healthy eating plan yesterday, I also:

  • Ate more protein: Extra turkey on my salad, tuna, hard-boiled eggs, cheese sticks (I’m going to need to find something other than hard-boiled eggs for snacks SOON.)
  • Ate less sweets: I had one small cookie.
  • Diet drinks: 2 Coke Zeros (Still down from 4, and I gave into that second one late night.)
  • Peanut Butter: Day 2 boycott complete.

Third day is always the hardest. At least I’ll have something to distract me. Today we’re heading out to the Electric Daisy Carnival.


Someone decided that techno and carnivals would be a great mix. Then my husband found out about it and the rest is history. Tickets were bought and I even rescheduled my chemical peel so we could go (wife points +8). This event is outside and it’s hot out there. So pray for me.

    I love roasted vegetables! I roast EVERYTHING lately. I’ve got my husband trained to get out the cookie sheet and preheat the oven every time we start to make dinner 🙂

  2. I made roasted cauliflower this week, too! Roasting makes everything taste better. If you find a good protein snack other than eggs, please let me know. I’m having a hard time with that, too. I keep trying to do cottage cheese, but I get tired of that so quickly.

  3. I’ve never tried roasting cauliflower – but I do love some roasted asparagus! (pretty much cooked the same way)

    Eek! It’s supposed to be HOT this weekend too. Preparation for marathon training?? I hope you have FUN 🙂

  7. I roasted some cauliflower last night too… it’s so much better than the sicknasty BOILED version my mom used to make. Why do people BOIL their vegetables? haha

  10. Love roasted cauliflower! So easy to make and so yummy! I know it involves pasta, but you should try Angela from Oh She Glows recipe for avocado pasta. So easy to make and seriously delicious!
